Take your date to Shakespeare's Globe Theatre, either for an actual play (depending on what they're showing throughout the year) or if you want a slightly pared down version then go for a tour of the theatre and exhibition centre they have. Accompany it with drinks and dinner and you should be onto a winner. The Globe itself has a nice restaurant overlooking the river, but if you want something else there's Borough market heaving with nice restaurants around the corner and for something more romantic (weather depending) it's a nice riverside walk down to Oxo Tower, Gabriels Warf, or the collection of restaurants they have closer to Waterloo (Ping Pong being a favourite!).
